Our Junior Sous Chef
As Junior Sous Chef within our Farmyard Kitchen, you’ll play a key role in supporting the Chef Manager and Sous Chef with the day-to-day leadership of a busy, produce-driven kitchen. Working with exceptional seasonal ingredients sourced from our Estate and trusted local suppliers, you’ll help ensure every dish reflects the quality, sustainability and creativity that defines our culinary ethos. You’ll support the smooth running of service, guide junior chefs in their development, and maintain the high standards of food safety, organisation and presentation that our guests expect.
Key Responsibilities
- Support the Chef Manager and Sous Chef in overseeing daily kitchen operations to ensure smooth and efficient service
- Lead and coordinate service when senior chefs are absent, maintaining quality and consistency
- Ensure all dishes meet specification for flavour, presentation and portion standards
- Supervise, mentor and develop junior chefs, supporting their progression within the brigade
- Assist with ordering, stock control and stock rotation to minimise waste and maintain GP targets
- Uphold food safety, allergen and HACCP procedures while ensuring accurate record keeping
- Maintain excellent standards of cleanliness, organisation and professional presentation

What we're looking for
- Previous experience as a Chef de Partie or above within a luxury or high-quality kitchen environment
- Passion for seasonal produce and refined cooking
- Strong organisational skills and the ability to remain calm under pressure
- A reliable and professional approach with excellent time management
- Experience with stock rotation and kitchen organisation
- Good understanding of food safety and HACCP principles
- A confident, approachable team player who enjoys mentoring junior chefs
- Basic computer literacy and familiarity with kitchen ordering systems

The Farmyard Kitchen is a chef-led, produce-driven restaurant set within a restored barn environment at the heart of the Estate. The menu celebrates seasonality, sustainability and provenance, with dishes shaped by what is available from the Estate garden team and trusted local suppliers.
Whilst the setting is rustic and welcoming, the cooking is refined and thoughtful, with a strong focus on wood-fired techniques and food designed for sharing. The team works collaboratively to deliver high standards of quality and consistency, combining genuine hospitality with a serious commitment to craft, sustainability and the guest experience.
